As I'm sure most of you know by now, Jackson loves to cook. He asks constantly if he can help with dinner, snacks, deserts, breakfast...whatever there is to make, he wants to help. So, a few nights ago, Albert discovered a couple of bags of sweet potatoes that I hadn't cooked yet and asked me if I'd make a sweet potato pie for him. I've only ever made one before and I didn't care for how it turned out. In fact, I don't care for sweet potato pie at all (I much prefer pumpkin) but I know he loves it so I looked online for a good but simple recipe. Turns out , its a breeze to make. I skinned and boiled the sweet potatoes and when Jackson came home from school, there they were, sitting in the pot cooling down. He of course, was curious as to what I was making and when I told him, his little face lit up and he was so excited to help. So I told him he could be in charge of the pie (we baked two) as well as of the speghetti, salad, and breadsticks we were having for dinner. Seriously, he was like a kid in the candy store. We made videos and took pictures which I will put up this weekend when I have some time. All throughout dinner, he was anxious for desert so he could see if his Dad liked the pie. When we finally brought Albert a piece, Al said "Oh, this is really, really good." He also told Jackson that it was the best pie ever. I thought maybe Albert was just trying to make Jackson feel good but later on, he told me that he had been serious. So serious, that he wanted to take the second pie to work to keep with him so he could eat a peice every day...without the boys eating it all up as an after school snack! He said that it was probably the best one he'd ever tasted. Jackson was beaming with pride as we wrapped up the second pie for Albert to bring to work with him. The next day when Albert got home, we saw he'd brought the pie back again, minus the peice he'd eaten that day....we asked him about it and he informed us that when he brought it to work, his co-workers had wanted some and Albert didn't want to share. So now his plan was to store his pie in his car! This way, he figured it'd be safe from our kids as well as the staff at his job. I said to him, "Seriously, we can make more" So reluctantly, its now in the fridge agian (but well hidden from the boys...they would have to really look to find it" Today, I'm going grocery shopping and I'll pick up a few more bags to make some pies that Albert can share. That should make for a fun afternoon for Jackson. He also did a heck of a job on the speghetti....
Thurday night, I got a mom's night out. Well, a Moms night out with just Sydney. My friend Ora invited me to a bunco game with her MOPS group (Mothers of Preschoolers is what MOPS stands for) Anyhow, it was a great time though we ate so much junk that the next day, both Ora and I were dragging and had stomach aches and headaches. I asked her, "Ora, are we getting so old that we can't even handle a night out?" You would have thought we'd been drinking or something from the way we both felt...but nope...just too many chips, dips, cakes, brownies and other goodies. Of course the next morning I paid for it with the twins (most of you know how they act if they don't see me directly before bed, or if they dont wake up with me there). It was the usual clinginess, tantrums, crying if I stepped away from them for even a second...wanting to be cuddled constantly...same stuff. It truly makes me wonder if its even worth going anywhere at night without them until after they are in bed. Sydney did come with me...even though I was the only mom to bring a baby (I really hate leaving her) but she was a very good girl.
Gotta run, its well after 9:00 and I still only have Sydney and Brice awake. Gotta get everyone moving. We have several things going on today. Have a great Saturday everyone!

Wow, quite the chef Jackson, I am very impressed!!! Glad you got out and had some fun, I feel the same "hangover" whenever I overload on snacks as well, guess we are getting old, lol.
